Alain Ducasse Opens Aldabaran at Waldorf Astoria Rabat Salé
A First Address in Morocco
Alain Ducasse’s first restaurant in Morocco has opened at Waldorf Astoria Rabat Salé. Named Aldabaran Alain Ducasse, the address brings a contemporary Mediterranean perspective to the capital’s dining scene. Its setting on the 33rd floor offers views across Rabat, Salé, the Bouregreg Valley and the Atlantic Ocean.
Aldabaran Alain Ducasse: A Mediterranean Perspective
Drawing inspiration from the French and Italian Riviera, the menu centres on seasonal ingredients, precise cooking and clear flavours. Here, sophistication comes through the quality of the produce and the balance of each dish. Moreover, Morocco’s local ingredients give this Mediterranean approach a distinct connection to its surroundings.

From Riviera Vegetables to Gambero Rosso
At lunch and dinner, the menu includes petits farcis inspired by Lucien Tendret, with Riviera vegetables filled with farm poultry and milk-fed lamb. Meanwhile, gambero rosso accompanies ricotta tortellini, while lamb comes with caponata. Together, these dishes express a generous culinary style that gives each ingredient room to speak.
Breakfast with a Ducasse Signature
Beyond lunch and dinner, Aldabaran offers a dedicated breakfast experience, a relatively rare feature within Alain Ducasse’s restaurant portfolio. Homemade breads and viennoiseries open the morning, followed by his signature egg and mushroom Cookpot with thin slices of Wagyu ham. Finally, warm madeleines arrive in individual moulds, fresh from the oven.
Morgan Perrigaud at the Helm
Chef Morgan Perrigaud leads the kitchen, bringing experience from Paris, London, Barcelona and Doha. In 2022, he joined Jiwan by Alain Ducasse in Doha as chef de cuisine. Today, he carries that connection into Aldabaran Alain Ducasse, working closely with local producers and following Morocco’s seasonal rhythms.
A Setting Inspired by 1930s Rabat
Designed by Pierre-Yves Rochon, the 510-square-metre restaurant seats 66 guests. Its interiors draw on Rabat’s modernist architecture of the 1930s, with geometric lines and Art Deco references. Meanwhile, rosewood, varnished walnut and sand-coloured leather bring warmth to the room, while tiered levels preserve views across the landscape.

Moroccan Craftsmanship in Focus
Alongside the interior design, Moroccan craftsmanship gives the restaurant a strong sense of place. Artisan Hicham Essaidi contributes damascening, the intricate metal-inlay technique associated with Meknès. In addition, large vessels from Poterie Naji in Fez sit alongside sculptures by Jojma and paintings by Fatima Zohra Morjani. Her canvases interpret the sunsets visible from Aldabaran.
A New Chapter Above Rabat-Salé
With Aldabaran, Alain Ducasse introduces a dining address where Riviera influences meet Moroccan produce, craftsmanship and landscape. Above all, its identity rests on these connections, from the kitchen’s seasonal choices to the artworks surrounding the tables. The panorama completes an experience rooted in its location.
